On weekdays, I’m seldom organised enough to make cooked breakfasts, but the other day, after my morning run, I found myself with lots of energy and an extra half hour before work, so I tied up my apron, rolled out some puff pastry dough, and improvised these amazing honey almond twists. I used what I had in my pantry – honey, left-over strawberry marmalade, and shaved almonds – and enjoyed a warm café breakfast with my companion in my very own kitchen before skipping off to the office. You should try it too!
Honey Almond Puff Pastry Twists
This is the hot homemade breakfast for when there’s no time for hot homemade breakfast. Roll out the puff pastry dough on a floured counter, going for a manageable rectangular shape, then cut that into approximately 5 cm strips. Smear each strip with honey or marmalade, then sprinkle with almonds. Carefully twist each strip in the middle so that the embellished side faces upwards at both ends. Place on a paper lined baking tray, and bake in a pre-heated oven for about 15 minutes, at 180°C.
